のthemですか？これは、健康についての質問と言う形で挨拶を投げかけられた人たちです。もとは、the commonest greeting is a question about a people's health: "How are you?". But we do not expect the person to tell us about their health when they reply.

もっとも共通の挨拶は人に健康を尋ねる質問 "How are you?" 。でも私たちは相手（the person)が彼ら（their = the person) の健康について、返事をすることは期待してない。

the person -> their -> they -> them で全部、"How are you?"と挨拶された”相手”、その挨拶に答える”相手”　のことです。
