Kyoto is the place (which) I visited on my school trip.
Kyoto is the place (where) my father was born.
この２つの文について、カッコ内がなぜwhichとwhereになるか教えてください

以下のとおりお答えします。

the placeは「場所」という意味の「名詞」ですので、それを先行詞とする関係詞はwhichとなります。
＞Kyoto is the place (which) I visited on my school trip.
「京都は私が修学旅行で訪れたところだ」。

the place はまた「場所で」という意味の、「場所の名詞の副詞的用法」ですので、それを先行詞とする関係詞はin whichなどとなります。このin which はしばしばwhereと互換できます。
＞Kyoto is the place (where) my father was born.
または、
Kyoto is the place (in which) my father was born.
訳はどちらも同じで、こうなります。
「京都は私の父が生まれたところだ」。

⇒不可能だと思います。
which以下のmy father was bornが目的語を要求する構文でないからです。

＞Kyoto is the place where I visited on my school trip.
⇒絶対不可能ということではないかも知れませんが、不自然な感じがあります。

There are many sights to see in Kyoto where I visited on my school trip.
「私が修学旅行で訪れた京都には見るべき名所がたくさんある」
というような表現ならもっと自然な感じがします。

両方の文とも　witchとwhereを入れ替えてもほとんど意味変わらず通じると思います。あえて言えばむしろ、以下の文章の方が自然かもしれません。

Kyoto is a place visited on a school trip.
Kyoto is where my father was born.
