You can see a cultural fusion in Turkish dishes as well. Don't you think that those dishes are similar to the ones that you can easily find at any other countries? That's what we call fusion cuisine. it's a combination of various forms of cookery and comes in different forms. There is the fusion of cuisine all over the world. I talk about two different types of fusion cuisine. Regional fusion combines different cuisines of a region or ethnic culinary traditions. What I'm talking about is Japanese fusion cuisine. Some of ingredients on top of food are never used in Japan. Those dishes become a fresh new taste and style which never come up to the mind of Japanese if they think about traditional Japanese food. Turkish dishes are, however, different from such kind of cuisine. Foods based on one culture, but prepared using ingredients and flavors inherent to another culture, are another forms of fusion cuisine. Let us look at Midye Deneyimi again. This dish is cooked with olive oil which is commonly used in Mediterranean food to fry vegetables and rice. The most well known food of this type is Spanish Paella. Midye Deneyimi is not only flavored with olive oil but also with cinnamon and cumin. The former came from China via The Silk Road and the latter from the continent of Africa. Turkish makes it by combining the ingredients from the Mediterranean, Asia and Africa. Then this particular dish becomes a fusion of Turkish and Mediterranean cuisine. Such a fusion culture is not only seen in dishes but also in buildings in Turkey
