お元気ですか？
私たち家族は元気にしています。
母に贈っていただいた本を見ました。
私たち家族の事をたくさん写真に残してくれてありがとうございます。
あの楽しかった日々が鮮やかに思い出されました。
ジーンおばさまやあなたとの思い出がよみがえりました。
このような素晴らしい写真集にしていただきありがとうございます。
もう一度日本に来ていただきたいと思います。
充分なおもてなしも出来ませんでした。
是非また会いたいと思います。
いつか私もカナダに行ける日が来ることを願っています。

We were not able to give enough hospitality to you last time.
I really would like to see you again.

☆「キャサリン」のつづりは、Katherine, Catherine, Cathleen, Kathryn 等たくさんあるので、質問者さんが選んで下さい。

☆「母に贈っていただいた本」と言うのは、文脈から「写真集」ではないかと解釈して訳しました。単なる本の場合は、the book of photos を the book にして下さい。

My family couldn't be better.
I'd seen the book you sent to my mother.
Thank you for having taken many photos of my family.
They reminded me of those happy days with you and jean,as if I were there again.
It was very kind of you to have made them into such a wonderful album.
I think Id'like you to come to Japan again.
I wasn't able to entertain enough that time.
I do hope to see you again.
I wish I could go to Canada someday.
