You should have divided these questions into 3 different ones. It's very hard to answer all of the questions in English for Japanese people like me. 1) Though distinctions between は and が reflect many types of meanings, in this case, the contrast is used to show a noun phrase as an information is old or new, like "the" and "a" in English. For example, むかし、あるところにおじいさん「が」(an old man)いました。おじいさん「は」(the old man)まいにち山へ木をきりにいきました。 The first おじいさんis a new one. So, it is marked with が. On the other hand, next おじいさん that is identical to the first one is followed by は because it is an old information. Things are the same for 日本語in your sentences. You should choose は for 日本語in日本語は勉強しやすいと思っていましたbecause you have mentioned 日本語 in the previous sentence 昔、私は日本語を習いたかったです. 私is usually marked with はas an old information because 私 is the speaker that is overt for the hearer of the sentence. Of course there are many exceptions, you should also choose は for 私 in your sentences. 2) 「私の日本人の友達が大切です。」この文章はOKですか? It depends on the occasion. If you want to emphasize 私の, not someone else's friend, you could say that. But it sounds quite strange without such context. If it is not necessary to emphasize 私の, you should say 私は日本人の友だちが大切です。 3)I would say日本語はいくら勉強してもしすぎることはないor日本語にはいくらでも勉強することがあるfor "YOU CAN NEVER STUDY TOO MUCH, AND THERE'S PLENTY OF NEW JAPANESE WAITING FOR ME". Anyway, どれだけたくさん勉強しても日本語を学ぶことはまだたくさん残っています means literally "no matter how much you may study, a lot of Japanese stuff to study still remains." Maybe, you didn't understand the structure どれだけ~してもwhich is a sort of subjunctive or conditional structure.

I am not a specialist of Japanese grammar!!! (1)昔(以前?)、私は日本語を習いたかったです。そのとき私”は”若かったので日本語”は”勉強しやすいと思っていました。 なぜ”は”が正しいですか? ”が”はダメですか? 日本語”は”勉強しやすいと思っていました。 “は”means; I thought that Japanese is easy to learn. I didn’t care if other languages are easy or difficult to learn. “が”means; I thought that Japanese and not other languages is easy to learn. (It is not clearly said, but nuance is “Japanese is easier”. (2)私の日本人の友達が大切です。 It is understandable, and there is no mistake. But not perfect and not recommendable. Japanese does’t like to repeat same JOSHI in short interval, in this case “の”. In order to avoid the repetition, one of the repeated JOSHI shall be replaced by another word od clause. I would say 私の持っている日本人の友だちが大切です。 Better is 私の持っている日本人の友だちは大切です。”が”or ”は” Question; Is it necessary to say 私の持っている日本人の友だち? Perhaps it is enough to say日本人の友だち. CONCLUSION; 日本人の友だちは大切です。 This is not included in your questions. 私は日本語を習いたかったです。習いたかったです。 I cannot explain clearly. But past tense of Japanese is sometimes difficult, especially in DESU/MASU-form. Today I write hear only what I would say in this case without grammatical explanation. 昔、私は日本語を習いたいと思いました。 昔、私は日本語を習いたいと思っていました。 I hope someone correct or supplement my explanation. It is recommendable that you write which language is your mother language. Perhaps someone can write his explanation in relation to your mother language.

First of all, thank you very much for your helping me out. I am still how to learn japanese and I'm sorry but I don't get your explanations :( I'm actually not taught rules of japense grammer in that class ns not actually sure if there's a way to learn something like that except in the natural progression of learning. Since I'm still dairly intermediate and haven't found my own "voices" yet, the point is really is to just write-even if it sounds ramble ot awkward. I do hope my japanese improves and thanks again for your help. Really appreciate you.
